Delicious Paleo Muffins

I’ve been eating a Paleo diet for close to a month now.  Almond butter has been my favorite new discovery.  It is amazing.  I’ve been putting it in and on anything in sight.  I feel sort of freakish telling people I am eating this way, but I feel great.  I’m also doing Bikram Yoga 2-3x a week on top of my usual gig at Latitudes.   Who knew working out could be a full-time job?  Yikes.  Regardless of whether you are eating Paleo or not, try this recipe!  Your kids may love it too!  Be cautious of nut allergies, of course!

PALEO MUFFINS:

Just modified these to include flax seed meal (just a tbsp or so), nutmeg and vanilla.  So good – and good for you (unless you have a nut allergy, then you’re in trouble!) Paleo Muffins: 3/4 cup almond butter 1 cup almond flour (or ground almonds) 2-3 medium ripe bananas, mashed, 2 egg,s 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon ground cinnamon.

Bake 20-25 mins @ 350; makes 12 **** 162 cals per muffin, 9g fat (<1 saturated), 16g carbs, 5.5g protien, 4g fiber, 9.8g sugar*****
