I made this chicken last night for dinner. It’s a little healthier than deep fried chicken, and a lot easier to make. We are a family of 5, so I made enough to have leftovers. It was very tasty and filling, and perfect for a diverse (polite word for picky) group of eaters.
You will need:
8 Chicken Thighs
3/4 C Bisquick
1/2 C Flour (I like King Arthur )
1 tsp good kosher salt
1/2 tsp onion powder
1 tsp dried basil leaves
1 tsp oregano
garlic salt to taste
pepper to taste
Directions:
- Preheat oven to 400 degrees.
- In a large Ziploc bag, combine Bisquick , flour, salt, onion powder, basil, and oregano. Shake to mix and set aside.
- Season chicken thighs with garlic salt and pepper to taste on both sides.
- Toss chicken in flour mixture, ensuring it is evenly coated.
- Microwave 2 TBSP butter until melted. Spread evenly around the casserole dish.
- Place coated chicken skin side down in casserole dish.
- Bake at 400 F for 15-17 minutes. Then, flip over so skin is up and then cook until finished, about 10-12 more minutes. Chicken should be nice and crisp.
Great sides with this include: rice, squash, sautéed spinach, or mashed potatoes. If you have extra time, gravy would be delicious too.
