Healthy. Delicious. Easy.
A woman at my gym wrote a fabulous Paleo cookbook. These blueberry scones are in her book. They are a must-make for anyone who loves their baked goods but is trying to maintain a clean diet.
If you have just a few minutes in the morning, you can throw these together.
Here is what you need:
2.5 cups blanched almond flour (I buy mine in bulk from Amazon)
1/2 tsp. sea salt
1 tsp baking soda
1/2 tsp cinnamon
1/2 cup of ghee (or you can cheat and use butter, I do this sometimes!), melted and cooled
1/4 cup raw honey
2 eggs
1 cup fresh or frozen blueberries
Here are the directions:
Preheat your oven to 350 degrees.
Mix dry ingredients in small bowl and set aside. In a medium bowl, blend ghee, honey, and eggs together well. Add the dry mixture to the wet mixture. Gently fold in blueberries. Spoon 1/4 cupfuls of mixture onto baking sheet. Bake for about 12-14 minutes. Let rest for 5 minutes and then allow to cool on a cooling rack for 5 minutes more. Makes approximately 12-14 scones.
You should store them in a cool, dry place, or in the fridge. Or, you can freeze the extras.
