Blondies are my favorite go-to dessert. I bring them when delivering a meal to someone, or when we are invited somewhere for dinner. To be totally decadent, they also make a great base for a brownie sundae. Add vanilla ice cream, hot fudge, and whipped cream and you will have something totally scrumptious and ridiculously fattening to enjoy. They freeze well too. A couple of people have asked me for my recipe recently, so here it is!
Ingredients:
1 cup of unsalted butter (2 sticks), melted
2 cups of light brown sugar, firmly packed
2 teaspoons of baking powder
1/4 teaspoon of salt
1 teaspoon of vanilla
2 cups of all-purpose flour
2 eggs
1 cup of semi-sweet chocolate chips or milk chocolate chips. I’ve also used dark chocolate. ALL are delicious choices.
Directions:
Preheat oven to 350 degrees F.
Butter a 9 x 13 baking dish.
Pour the melted butter into a large mixing bowl. Add the brown sugar.
Mix thoroughly.
Stir in the baking powder, salt and vanilla.
Slowly add the flour.
In a separate bowl, whisk 2 eggs well.
Add to the blondie batter.
Mix well.
Mix in the chocolate chips.
Pour into the prepared 9 x 13 baking dish.
Spread the batter around the pan as evenly as possible. Bake for 36 minutes (the center should still be gooey, which makes all the difference!)
Cool before cutting!
