Healthy Bib Lettuce Tacos

Looking for an easy way to cut out the carbs but still enjoy tacos?

I made these for dinner last night and they were quick, easy, and super tasty. They will take you about 20 minutes from start to finish.

Here’s what you will need (serves 2 people, with some leftovers):

  • 1 lb. organic beef
  • Taco seasoning
  • 2 ripe avocados
  • 3/4 c. shredded cheddar cheese
  • 1 lime plus bottled lime juice
  • fresh cilantro,chopped
  • salsa or chopped fresh tomato (not shown because I forgot to buy these items)
  • sour cream
  • 1 large head fresh bib lettuce, rinsed and divided
  • optional: sauteed onion, black beans

Instructions:

Cook beef on stove top with a tablespoon of olive oil.  When fully cooked, add taco seasoning and finish cooking according to directions.

Make guacamole by mashing two avocados, adding 2 teaspoons of kosher salt, and a tablespoon of lime juice.

Lay 3 large bib leaves on each plate. Scoop taco meat, chopped cilantro, sour cream, salsa, cheese, and perhaps sauteed onion and beans onto leaves, leaving enough space so that you can easily roll them up and hold them.

Your tasty and healthy “tacos” are ready!
