Are you looking for some healthy deliciousness all in one? Are you trying to avoid bread (even though you love it like me)?
These wraps will come as close to having a real sandwich without busting into the grains. Furthermore, they can be made from leftovers very easily. Save any boneless chicken breasts or thighs and turn them into chicken salad. I do think mine were so tasty because of the way I marinated the thighs the night before, so I’ll share what I did here as well.
First, I prepared a marinade in my blender (this was enough for 6-7 boneless chicken thighs). In regards to the spices, fresh is always wonderful. You won’t likely have them around, so don’t run to the store. I made it with all dry spices and it was delicious. The only thing I had on hand was a fresh lemon and good olive oil. This recipe is from Gwyneth Paltrow’s IT’S ALL GOOD: Delicious, Easy Recipes That Will Make You Look Good and Feel Great and is one of many super recipes in her book.
- 1 tsp sage
- 1 tsp thyme
- 1 tsp rosemary
- 1 tsp parsley
- 1 TBSP basil
- 1 clove garlic
- 1/4 cup olive oil
- Zest of 1/2 lemon
- 2 TBSP lemon juice
- 1/2 tsp sea salt
Place all ingredients in blender and pulse a few times. Marinate for 1-4 hours before grilling, or overnight if you’re super organized like me.
That made a delicious dinner with a green salad the night before. What came next was even better.
I took 3 of the leftover thighs and cubed them into pretty small pieces. I mixed the chicken in a bowl with Mark Sisson’s Primal Kitchen Avocado Mayo, a teaspoon of lemon juice, salt, and pepper. Place the chicken salad generously onto the salad leaf. Break up the bacon on top. Wrap the lettuce almost like you would a tortilla and eat! YUM!
