Whenever I’m trying to follow a clean diet, delicious baked goods are my saving grace and these Paleo orange cranberry muffins are no exception! I find that muffins are great with your morning coffee, or as a dessert replacement if you are struggling with sugar cravings.
I whipped up a batch of these Paleo orange cranberry muffins recently and they are tasty and easy to make. You can store them in the fridge, or even freeze them. I’ve also put together a few other Paleo recipes including this lemon blueberry one, so tasty! If coconut is more your thing, try these…great for breakfast or dessert!
Here’s what you’ll need:

- 2 cups Blanched Almond Flour
- 1/2 tsp baking soda
- 1 tsp almond milk
- 1/8 tsp sea salt
- zest of 1 orange
- 3 eggs
- 1/3 cup melted Raw Honey melted and cooled
- 2 T. Clarified Butter (Ghee) melted and cooled
- 2 T. fresh squeezed orange juice (from the orange you zest)
- 1/2 c. dried Craisins“>Craisins
Directions:
Preheat oven to 325.
Mix all dry ingredients in one large bowl, with the exception of the Craisins.
Then, mix wet ingredients in a smaller bowl.
Add the wet to the dry and mix thoroughly.
Gently fold in the Craisins.
Fill muffin tins about 3/4 of the way.
Bake for 20 minutes. Test with toothpick to be sure it comes out dry.
