Are you craving a scrumptious lunch with a greasy and salty taste but want to keep it healthy?
Meet my new favorite meal, the burger in a bowl. What I love, love, love about this concept is that the possibilities are endless. I came up with this idea after watching my friend Katie eat enormous healthy salads for lunch. I enjoy doing that too, but I get bored with salad after salad, and some days, you just want something that has that diner smell and taste about it.
Start with a big bowl. It’s OK, you’re not eating bread! The bowl I used could hold a small dinner salad for 2-3 people.
The INGREDIENTS:
Grass fed beef shaped into 1/4 pound patty
2-3 sliced cooked bacon
Ripe avocado
1 sweet potato
THE SIMPLE DIRECTIONS:
Roast the sweet potato. I peeled it, diced it into small cubes, tossed with kosher salt and 2 TBSP good olive oil, and roasted it for about 30 minutes at 425 degrees, moving the pieces around every 10 minutes until it looks golden brown on the edges.
Fry the bacon and set aside.
Cook the burger in the bacon pan after you’ve drained the fat. Set aside.
To assemble your burger in a bowl, slice up the meat and avocado and place in bowl. Scoop in a cup or so of the sweet potato. Sprinkle with crumbled bacon. Top with the vinaigrette.
Voila!
Other modifications could include: freshly diced tomato, grilled onions or mushrooms, or shredded cheese if you aren’t avoiding dairy. Substitute turkey burgers or grilled chicken.
