Tasty Paleo Granola

Paleo isn’t just for those following the diet.  It’s a healthy style of eating that anyone can weave into their daily life.  Breakfast options can seem daunting when you are trying to be healthy. Granola is something I’ve always loved, but finding one that is good for me and actually tastes yummy has been challenging.  This recipe fits the bill, and is great for breakfast or to make as a snack.

First, preheat your oven to 275 degrees. Granola cooks best on a low setting.

You will need:

+Food processor

+Large Mixing Bowl

+Cookie Sheet

+Spatula

+Mixing Spoon

+Parchment Paper

Ingredients:
– 2 cups raw almonds
– 1 1/2 cup raw unsalted cashews
– 1/2 cup raw unsalted pumpkin seeds
– 1/2 cup raw shelled unsalted sunflower seeds
– 1/2 cup unsweetened coconut flakes
– 1/2 cup coconut oil
– 3/4 cup organic raw honey
– 2 tsp. vanilla extract
– 2 tsp. sea salt
– 1 cup Craisins (regular or cherry are both great options)

Makes 8-10 servings.

*note: the first time I made this, I did not have all the nuts.  Use what you have. If you are minus the pumpkin seeds or sunflower seeds, it will still taste great.

Directions:

+Place all of the nuts as well as the coconut flakes in a food processor.  Pulse just a few times to break them up into chunks.  Don’t over blend!
+Place the coconut oil, vanilla, and honey in a medium-sized saucepan over medium heat. Allow to fully melt. Stir thoroughly, then add the nut mixture, mixing until the everything is fully coated.
+Line a baking sheet with parchment paper. Spread granola mixture evenly onto this and bake for about 25 minutes or until golden brown, moving around 2-3 times with a spatula. When you take it out of the oven, add Craisins and sprinkle with the sea salt. Now, press the mixture together and form a flat surface, like when you make rice krispy treats (but this is much healthier!).  I used my hands for this.
+ Cool for 30 minutes or until hardened, and then break into chunks. Keep in an airtight container for 7-10 days. You can refrigerate it as well if you like, or even make in bulk and freeze.
